Inventing the Shrimp Seasoning Grinder
Transforming Seafood By-Products into Vietnam’s Favorite Seasoning

Growing up in Vietnam, I had always been fascinated by Tây Ninh shrimp salt, a beloved seasoning found in nearly every Vietnamese household, sprinkled over fresh fruits, grilled meats, and countless traditional dishes. But behind this simple yet flavorful condiment was an inefficient and wasteful production process that relied heavily on manual laborand low-yield traditional grinding methods.

At the same time, seafood processing factories discarded tons of shrimp shells daily, a by-product often treated as waste rather than an ingredient with potential value. I saw an opportunity: What if I could design a machine that transformed these discarded shrimp shells into high-quality shrimp salt?

 

Identifying the Problem: Waste vs. Opportunity

In traditional shrimp salt production, two major inefficiencies stood out:
1️⃣ Raw shrimp shells were often wasted despite being rich in umami flavor and natural calcium.
2️⃣ Seasoning production was labor-intensive, requiring separate steps for shell grinding, salt roasting, and ingredient blending.

Recognizing these issues, I set out to invent the Shrimp Seasoning Grinder, a fully automated machine capable of grinding shrimp shells, roasting salt, and blending them into Tây Ninh-style shrimp salt in a single, seamless process.

From Concept to Creation: Engineering the Machine

To maximize efficiency and preserve the freshness of shrimp shells, I designed the machine to collect shells directly from the Automatic Shrimp Peeling Machine. This meant that instead of being discarded, fresh shrimp shells would be instantly repurposed, preventing spoilage and maintaining flavor quality.

The machine needed three core functionalities:

🔹 Grinding System – Designed with high-speed rotating blades to finely grind shrimp shells into powder while retaining their natural umami essence.
🔹 Salt Roasting Chamber – Using precision heat control, this chamber ensured the salt was roasted at the perfect temperature to enhance aroma and texture.
🔹 Automated Blending Mechanism – A specialized mixing process evenly combined ground shrimp shells, roasted salt, and optional spices to create the perfect seasoning.

 

After months of prototyping, refining, and testing, the Shrimp Seasoning Grinder was ready.

Industry Impact: Changing the Way Vietnam Produces Shrimp Salt

When the first machine was installed at a seafood processing plant, the results were game-changing:

✔️ Zero Waste Production: The machine converted shrimp processing by-products into a valuable seasoning, optimizing the seafood value chain.
✔️ Scalability & Mass Production: Factories using the machine could now manufacture shrimp salt on an industrial scale, ensuring consistent quality for supermarkets across Vietnam.
✔️ A Sustainable Solution: By reducing waste and maximizing resource utilization, the machine helped lower environmental impact while boosting profitability.

A Household Staple Across Vietnam

Before long, shrimp salt produced by the Shrimp Seasoning Grinder was seen on supermarket shelves nationwide. The once-overlooked by-product of shrimp peeling had now become an essential ingredient in Vietnamese cuisine, enjoyed by millions.

 

This journey, from identifying food waste to creating a machine that transformed it into a best-selling product, was not just about innovation. It was about rethinking how we use resources, reducing waste, and adding value to every part of the seafood processing chain.

The Shrimp Seasoning Grinder was more than just a machine; it was proof that sustainability and efficiency could go hand in hand, one flavorful sprinkle at a time.
